How to Make Lentil Soup (Mercimek Corba)

Lentil soup is a cheap, tasy and easy dish to make at home. It is perfect with the awesome Turkish bread!

You will need:
Red lentils; dry
1-2 carrots
1 potato
Salt and pepper
Optional: red pepper, cayenne pepper, other spices to taste

Wash the lentils until water runs clear. Boil 2 cups of lentils, or however many you wish, in water. Put in 3 times as much water than the lentils. It doesn't really matter, because as the soup boils down you will add water to keep the consistency or amount you want. Trust me, its ok.

Chop up the potato and carrot into very small pieces and add them to the soup. Use a generous amount of salt; and add any spices you want as well. Allow the soup to boil, adding water when it becomes too thick. Once the lentils are soft or being to mush together like a soup (about 30 min), use a cake mixer or blender to blend the soup. Add water to get the consistency desired.

You're done!
